I have made this a few times and there are never any leftovers!
5 medium sized potatoes
8oz Sour cream
2 tbls Ranch dressing
1/4 pack of bacon
2 cups cheddar cheese (remember to save a handful to sprinkle on the top before putting in oven)
1 tbls grated red onions (I don’t like huge chunks)
Sprinkle of Basil, Garlic powder and Paprika
S&P to taste
Preheat oven to 400 degrees.
First I get my bacon cooked so it can cool down before cutting into small bite sized pieces. Don’t cook it crispy as it will cook a little more in the oven
Then I peeled (I hate this part) and grated the potatoes
Wow my hands look wrinkly, they normally are cuter! I totally need a manicure…
I grate all the potatoes into the 9×9 Pyrex dish. I do this because then I don’t have to dirty a bunch of dishes.
I then mix all the ingredients together including my favorite pepper from Ireland
Once I have all the ingredients mixed together I heard a crying baby… so I stuck him on my side and continued on. I topped the hash browns off with a generous amount of cheese and got it in the oven
Stick it in the oven for 45-50 minutes or until it is bubbly and golden brown on the top
The second I pulled it out of the oven I had two hungry puppies waiting for some. Duke decided to stare me down and Hailey just lay behind my feet
I cut it into sections and then use a spatula to plate it. I made a small salad on the side so I didn’t feel like a HUGE fatty 🙂
