Not sure what to do with your leftover potatoes? Why not have them for breakfast the next day?
Cut up all your leftover potatoes while you head some oil in a pan. Once your oil is hot throw in your potatoes. Season with Basil, salt and pepper, I use a good handful of each.
Once your potatoes move them to one side of the pan and add 2-3 eggs on the other. Cook through, making sure to season with S&P.
Mix your eggs and potatoes together and then add the cheese to the top. Allow it to melt thoroughly.
(I had to split it three ways so my plate is looking a little sparce)
