Cowboy Casserole

My husband loves his food and there are times when I just need to make a big manly casserole. This is definitely a favorite in my house!

There are few different versions of this recipe, but this is the one that I use… I switched up the ingredients a bit so it is an original:


1.5 pounds ground beef1 medium onion
3 cloves of garlic
1 can of corn, drained
1 can cream of chicken soup {I know sounds weird, but trust me}
2 cups cheddar cheese, shredded
1/2 cup milk
1/4 cup ranch dressing
1 bag of frozen tater tots

Preheat your oven to 350.

In a large skillet cook your onion until its translucent, add your chopped garlic and cook for a few minutes. Add your beef and cook it until it’s no longer pink. Drain the meat and place into a bowl and set aside.

In another bowl combine your soup, milk and ranch. Whisk it until it’s smooth. Add your beef and stir to combine fully. Add your corn and 1 cup of cheddar. Mix it all up again.

Lightly grease a 9×13 baking dish. Layer half of the tater tots on the bottom. Pour the beef mixture over the top and then layer with the other half of the tater tots. Sprinkle with the remaining cheese and bake for 25-30 minutes or until your tater tots are golden brown

I am going to warn you that this dish does not look like a 5 star meal, but it does taste delicious. I guarantee that any man in your life will love it. My husband had two bowls and then another around 11pm that night, as well as my FIL who came upstairs to ask for more at 11 🙂
